Hello! I’m Britt—a wife, mother, homemaker, and certified Vegan Lifestyle Coach and Educator (VLCE). I’m also a writer, cook, runner, yogini, and general creator of things. Not necessarily in that order. As the title of this blog suggests, I have soft spot for kale. I’m a one bunch equals one serving kind of gal and will take it any way it comes—raw, steamed, sautéed, as chips, or loaded into smoothies. Greens are definitely my thing.

My days are largely spent kiddo-chasing, dog-walking, mess-cleaning, and cooking up delicious plant-based meals in my Brooklyn kitchen. I’m passionate about food that tastes great and promotes health (fortunately those two things are not mutually exclusive) and believe that every bite is more delicious when nobody had to get hurt to make it come together.

That being the case, all of the recipes on this blog are 100% vegan. Since I personally have a fraught relationship with gluten, they’re also totally GF. I’m not in the anti-gluten camp, however, so I do try to provide a “gluten option” where applicable to simplify things for those who can enjoy it freely. As a firm believer that anyone can be vegan, I also make an effort to consider other allergens and provide alternatives when possible.

In addition to recipes, you’ll find vegan lifestyle tips, resources, restaurant reviews, and personal musings on the pages of this blog. I take zero offense if you’re only here for the food. 😉

Not yet vegan? Welcome! I hope to inspire you to include more plant-based meals in your regular rotation and cruelty-free products in your life. If you’re interested in becoming vegan but aren’t sure where to start, tried it in the past and couldn’t make it stick, are struggling now, or just aren’t sure how to make the lifestyle work for you, I’d be happy to help. Shoot me an e-mail at leavesofkale@gmail.com and we can set up a consultation to see if a Vegan Lifestyle Coaching program could help you get there.

Curious to know anything else? I’m an open book. Don’t hesitate to ask.

Thanks for stopping by. Now let’s get to creating vibrant health, saving lives, and healing the planet—one bite at a time!
